About Salt Salt, or sodium chloride, is a chemical element with the formula NaCl. Salt contains 40% sodium (Na) and 60% chlorine (Cl). If you were to look at salt under a microscope, you would see that it is made up of many rectangular particles.
Table salt is the best-known salt, which we use daily in cooking. This rock salt is an essential mineral to human and animal life. However the daily requirement is very small and salt excesses can be harmful for humans, animals and plants alike.
Salt is one of the oldest ways of flavouring our food and salting is also an important method of food preservation. The flavour of salt is one of the fundamental human tastes. Salt for human consumption is produced in different forms: unrefined salt (such as sea salt), refined salt (table salt) and iodised salt. It is a crystalline solid, white, pale pink or light grey in colour, normally obtained from sea water or rock salt deposits (salt mines).
Salt is involved in regulating the water content (fluid balance) of the body. The sodium ion is used for electrical signalling in the nervous system. However, too much salt increases the risk of health problems, including high blood pressure. |
